I started cooking on the chiminea only pizza. As I love to prepare homemade pizzas for my kids and I wanted to add this unique and irresistible flavor or a wood fired pizza oven. But living in a tiny house means not having space for a real pompei brick garden oven.

Chimineas are great for garden decor but for garden cooking as well. As they have a portable size, you can move them if ever changing home. And you can fire a clay chiminea with charcoal or wood, meaning they are good for bbq and baking pizza as well.

These terracotta fire pits are great when gathering family and friends. Pizza parties never tasted soooo delicious!.

So, I’ve been noticing, many of my friends have been making the Thai Turkey Burger lately and it got me thinking…  how I want to share another Turkey burger recipe we’ve been cooking up lately on the chiminea!

I have to say, these wood fired burgers are pretty tasty. My eldest kid doesn’t miss the red meat one bit because they just have so much flavor! I know you’ll think the same.

The nice part is they can be grilled or pan-seared on the top of the chiminea as well, which is faster on mixing charcoal and firewood if you are in a hurry and even made ahead, perfect for meal prepping.

There are very adaptable to any chimineas but I suggest the one on images since this comes with all accessories, including the grill and the coal poker as well.

Turkey meat is great for eating healthier lighter burger; made from scratch and seriously bursting with amazing flavor, your kids or family would not feel much different than beef! Those are my favorite!


Turkey is generally lower in saturated fat than beef. As such, it may be a better choice for heart health. Fat-free turkey is also the lowest calorie option if you're interested in weight loss. However, if your main goal is flavor, ground beef may outshine turkey in some dishes


Best turkey recipe for chiminea


Here are the basic ingredients for the chiminea cooked turkey burger. Note, if you don’t like cilantro, sub parsley, or if you are “heat-intolerant”, cut back on the jalapeno or leave it out. I do really like the little kick it gives. 

  • ground turkey
  • jalapeno, finely minced (optional)
  • scallions
  • cilantro
  • lime zest
  • 2 garlic cloves
  • olive oil (optional, but good)
  • salt
  • coriander
  • pepper

How to make burgers 

The essentials to fire a chiminea are :

    • a smokeless fire starter

    • aromatic charcoal

    • dry wood

Fire starters are great to skip the long process of firing papers and waiting the wood to catch flames. Nothing more annoying that spend 20 or 30 minutes to fire a chiminea when you are planning to cook on it. Just use this fire starters underneath a 2-layers of charcoal and your clay chiminea will be ready to cook rapidly.

Your clay chimney is able to reach up to 900F by using both, charcoal and firewood.


Here is a basic overview of how to make the Best Turkey Burgers!  (Detailed instructions are provided in the recipe box below!)

    • Mix up the burgers: Place all of the turkey burger ingredients in a bowl and lightly toss with your fingers into a fine crumble until mixed thoroughly. With slightly wet hands pat into 3-4 tidy patties, 1-inch thick.
    • On the Grill: Make sure grill is hot and grates are greasedGrill each side until golden, 4-5 minutes, lower the heat or move to cooler part to cook through. (To learn how to fire your chiminea, please read above)
    • To roast poblanos on the grill, turning to char evenly. Place in a covered bowl or paper bag to steam 5-10 minutes. Peel under running water, destemming and deseeding.  Alternatively, you could also simply just grill these until tender and skip peeling.
    • Chimichurri Mayo: mix 2 tablespoons (or more) chimichurri sauce with 4 tablespoons mayo.


Another thing I love adding to these turkey burgers are poblano peppers, which can be charred on your chiminea as well, please you must try them roasted with smokeless aromatic charcoal. They add a subtle mild heat to the burger!

How to cook peppers on chiminea

Once charred, cover them and let them steam for 10 minutes, then peel under cool running water.

Ok, and the condiment that brings this turkey burger over the top is the Chimichurri Mayo. Heav-en-ly!!!
